Ryan Blackburn, a renowned Michelin-starred chef, has launched a new dining establishment called The Schelly in Ambleside.

This venture follows the closure of his previous restaurant, Kysty, and promises an array of dishes inspired by his travels and love of different cultures.

Ryan Blackburn’s latest venture, The Schelly, marks a new chapter in his culinary journey. Situated in the heart of Ambleside, this new establishment is positioned next to his flagship, The Old Stamp House.

The Schelly introduces a casual dining experience, offering small plates that reinterpret classic dishes from The Old Stamp House menu, infused with influences from Blackburn’s global travels.

The menu at The Schelly is designed to change with the seasons, ensuring that diners experience the freshest ingredients. Each dish is crafted to highlight the best of what each season has to offer.

Some of the standout dishes include Cartmel Valley Cumberland Sausage with Egg Yolk Sauce, Potted Shrimp with Curried Cauliflower, and Yew Tree Farm Herdwick Hogget Shoulder with Mint & Anchovy Salad.

Fish enthusiasts can savour the Fish of the Day cooked on the bone, complemented by brown butter, capers, and parsley.

For dessert, the Cheesecake with Macerated Raspberries offers a delightful end to the meal.

In addition to the food, The Schelly boasts an extensive wine selection, with bottles sourced from small-scale growers across the UK and Europe.

The Schelly, named after a rare freshwater fish found only in the Lake District, provides an intimate dining atmosphere. It seats up to 24 walk-in guests and has an exclusive table for six near the pass for a close-up view of the chefs at work.

Ryan Blackburn emphasises that The Schelly is designed for informal gatherings, where guests can enjoy nibbles and small plates in a relaxed setting. The interior has been thoughtfully designed to offer elegance without formality.

Blackburn and his team faced challenges during the renovation of the historic building, but they adapted gracefully, aiming to preserve its commercial heritage.

Blackburn’s commitment to innovation is evident in the unique dining experience offered at The Schelly, which combines tradition with modern culinary trends.

Blackburn’s vision for The Schelly was to create a space where people could connect over food and wine, enjoying high-quality dishes in an unpretentious environment.

The meticulous efforts put into refining the menu and wine list highlight Blackburn’s dedication to providing an exceptional dining experience.

The Schelly invites guests to immerse themselves in a culinary adventure, tasting dishes that reflect the chef’s passion for diverse cultures and innovative cooking techniques.

Ryan Blackburn’s The Schelly is set to redefine casual dining in Ambleside with its innovative menu and relaxed atmosphere.

As a new venture, it promises to uphold Blackburn’s reputation for excellence while offering a fresh and inviting culinary experience.
